The River Tavern
Hawk Mountain Resort,

 Fine Dining at the Hawk’s River Tavern was always integral to the developer’s vision of creating a luxury resort community in the Green Mountains of Vermont. The Hawk Inn and Mountain Resort integrated 278 mountain home-sites along side a luxury 50 room country inn. Restaurant Solutions was hired to create the culinary centerpiece of the resort, a 90-seat fine dining restaurant that featured what was referred to at the time as "New American Cuisine". Our contributions to the restaurant included complete concept and menu development as well as
total management oversight.

- Roasted Holland Peppers with fresh mozzarella, basil and black olives
- Blackened Lamb Chops served with fresh Vermont goat cheese & jalapeno jelly
- Veal with Jahannisberg Dressing (artichoke hearts and pignoli nuts)
- Scampi Provencale with fresh garlic and sundried tomatoes on angel hair pasta
