Solutions was contacted in the spring of 2003 to discuss the
feasibility of converting two barns on an active 250 acre Angus
farm in Groton, MA to restaurant and function use. The family that
owned the property had recently purchased it to prevent the
farm, located in the heart of town, from being developed into 70 single family homes. After placing a
permanent conservation easement on the bulk of the property, the family
was now considering creating a restaurant and function facility in the
two under-utilized barns that remained.
After developing a
business and financial plan that indicated that the
project was financially feasible, Restaurant Solutions was
contracted to lead the development of the project. This was an example of our "Turn Key" services, as we were involved in
every facet of the project from concept, menu and recipe development;
architectural kitchen design; equipment specifications and managing
the competitive bid process; recruitment of key management
personnel; management and staff training; implementation of internal
financial and operational controls; and we even performed as the
restaurants Executive Chefs before and after the opening. We also
provided on-going professional referrals to the owners that led to
the selection of the project architects, as well as other allied
professionals in the fields including public relations, accounting,
insurance and employee benefits.
The 190 seat
restaurant opened October 12, 2004 and the function facility opened
the following week. The public response has been
overwhelming to say the least. Restaurant revenues have far exceeded opening
projections, and the major challenge has been dealing with the
extraordinary amount of excited customers that appear at the door every
night!
