Elements represents a complete transformation from the restaurant that
previously existed in this downtown Arlington location. Restaurant Solutions was
initially hired to assess the former restaurant, Tea Tray in the Sky, from the
point of view of concept viability, management and financial performance.
Significant changes were subsequently made in all areas beginning with an
overhaul of the hybrid retail-cafe-fine dining concept that existed to a more
coherent neighborhood fine dining restaurant with the addition of a full liquor
license, complete interior design makeover, and the addition of a bar. Menu
changes were minor but price points were adjusted down 20% to broaden the local
customer base and increase frequency. Significant management changes were also
made. Finally, new financial and operational controls were put in place along
with considerable management training to insure that these systems will be
effectively utilized in the future.
